Looking for a bite at your local mall? As US malls race to reinvent themselves, they’re turning to sushi conveyor belts, craft-beer membership clubs, and Korean barbecue to replace traditional fast-food chains. The pandemic, over-building, and a shift towards discount and online shopping have led to the departure of anchor department stores and popular chain restaurants from malls. In their place, smaller regional restaurant chains and a wider variety of global cuisines are emerging. Mall landlords are banking on emerging restaurant brands and “eatertainment” concepts to draw customers back. There is also a trend among national chains towards prioritizing drive-thru locations over sit-down restaurants in malls.
